This famous soup is easy to make, filled with yummy meat balls, a hearty broth, loads of Latin love! This is a simple soup that really only takes about 10 minutes to assemble, if you cook the meatballs a bit in advance. Chef Maribel shows you how to cut down on the fat in the soup, too, without sacrificing the flavor. Traditionally, this soup is made with meatballs, endive, and parsley, but this video provides many suggestions on variations of ingredients. For an added bit of flavor, Chef Maribel adds an egg-drop mix at the very end. Enjoy!

This soup sounds so good, I can't wait to try it out. I love that she offers alternative ways to make the meatballs to help keep the soup lower in fat. I also really appreciate the different options she gives for ingredients, if you decide you don't like chicory (or you have another green you need to cook!). Maribel is very thorough in her explanations for everything - why you should/shouldn't use certain ingredients, the purpose behind the timing, even the chemistry in the cooking!
